How to make Tara, aka stale bread?
Some cod roe, a little onion and some olive oil. Could it be simpler ?
Taramasalata sounds much nicer than “stale bread sauce.”
Simple and quick but so tasty.
Ingredients
1 loaf dry stale sour dough bread, not moldy but dry
200g cod roe: (depending on how strong you want it)
1 Red onion
100 ml olive oil
A squeeze of lemon
Method
Break your bread and soak in a little water, we are not looking for bread soup.
Soak for approximately 20 minutes, then wring it out and put in a food processor, not blender, we don’t want glue.
Blend and add the grated red onion, do not use white as it’s too strong. Grate it as we want the juice too .
Blend again, then add the cod roe and blend again until a lovely pink colour, then drizzle in olive oil to emulsify.
Serve with as squeze of lemon and a dusting of parikika.
